Meatless Monday: Avocado Egg Salad

I love avocados.

And I love egg salad, but I am less fond of mayonnaise.

I forget where I heard about this combination (probably Twitter, hello), but I looked on some recipe web sites and they are all about the same. Super quick and easy, and rather delicious.

Avocado Egg Salad

4 hard boiled eggs, peeled and cut in 4 pieces
1/2 an avocado
1 stalk of celery, diced
2 tablespoons red onion, finely diced
Salt and pepper to taste.

Toss it all in a bowl and mash up the eggs and avocado. I eat mine on whole wheat crackers, but I suppose you could make a sandwich out of it, too!

    • I’ve also been craving olives and feta cheese together. I made a kalamata olive and feta pasta, and I’ve thrown the combo into a salad, this week alone.

      And no: not pregnant.

      • I have been all over garlic stuffed olives and just polished off a greek pasta salad that I ate nonstop the last 3 days and never got tired of. I always have kalamata olives in my house! aidan loves them too.

        I am really tempted to try this egg salad…hate mayo, but this really looks good! and if I like it I can have it all to myself because my hubby hates avacadoes (I don’t know what is wrong with him!) and eggs.

    • I like that chickpea recipe. Wonder if the kids would try it. They love chickpeas; Kate loves hummus, but Flora doesn’t. I think M likes it, but there’s something he’s allergic too in the store bought one we usually buy.
      I do like egg salad with mayo, but I think I like this recipe better.
